Makes enough for 10 guests

To make the Clementine Syrup (makes 750ml)

300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g caster sugar

Ingredients for the Premix (produces 850ml, to serve 10)

400ml decent vodka
100ml classic gin
150ml peach schnapps
200ml clementine syrup (see above)
Fresh cranberries, to garnish
Mandarin essential oil, as a final touch

Method

Making the Syrup: Combine all the items into a saucepan, heat until it reaches a light boil, agitating to dissolve. After that, turn off the burner allowing it to cool down entirely. Decant to a sterilised bottle, close it and refrigerate it chilled, it can be stored for around four weeks.

To make Cocktail Base: Mix the specified liquid ingredients into a large bottle, leave to sit for 60 minutes, then strain best through a fine cloth, so it's completely strained.

When ready to serve: Pour 85ml from the batch mix into a stirring glass filled with ice, gently stirring carefully for about 60 seconds until cold. Strain to a frosted cocktail glass or a similar vessel, garnish with a few cranberries adding the final touch by giving it a quick spritz of mandarin oil above the glass.
